Pork and Rice in a jiff

Yet another simple dinner.

 

2 center cut pork chops (brined all day)

1 tsp of your favorite bbq rub

2 cups of water

1 cup rice (2 cups for instant rice)

2 Tablespoons of butter

1/4 cup each onion, celery and shredded carrot

steamed vegetable of choice (I used corn)

For the brine (simmer then cool when all ingredients dissolve:

1/8 cup kosher salt

1/8 cup of brown sugar

1/4 tsp of liquid smoke

2 Tablespoons of your favorite bbq rub

1 cup of water

Place brining solution and chops in a ziploc. Place in the refrigerator until ready to use. I leave mine all day.

Melt the butter in a sauce pan. Saute the onions, carrots and garlic. add the teaspoon of rub mix. Add rice. Stir to coat then add water. Simmer until rice is tender.

Meanwhile follow the instructions on the steamer bag of vegetables.

Spray a saute pan with oil or nonstick spray. Saute the pork chops until cooked through. Serve on a bed of the rice mixture with the vegetables. Add your favorite bbq sauce for dipping!
